b is for butter tart
i love butter tarts.
they've always been one of my favourite desserts. and many a summer -- especially when we were camping -- they served as my birthday cake.
of course, like all canadian food-lovers, i'm picky about the taste and texture of my tart -- they can't be filled with raisins (barf!) and if the pastry isn't crumbly, it's basically inedible. (apparently marion kane, of the cbc, agrees with me.)

Ingredients:1 1/3 cups all-purpose flour2 tbsp granulated sugar
1/2 cup butter
2 eggs
1 1/4 cups packed brown sugar
1/4 cup melted butter
1 tbsp vinegar
1 tsp vanilla
1 tsp all-purpose flour
Method:
Mix the first three ingredients in a food processor or mixing bowl until crumbly. Press into greased 9″ square pan. Bake at 350° for 10 to 13 minutes or until light golden brown. Beat eggs and brown sugar together with a whisk until well blended. Stir in remaining ingredients. Mix well. Pour over the base. Bake 25 to 30 minutes or until set and golden. Let cool and cut into squares. Try not to eat more than one!
